Garlic beef steak bites with butter

Dinner can’t be easier than making these Buttered Garlic Beef Steak Bites. All you need is a few pieces of beef tenderloin, which I already had in my freezer. I ended up with about three large, portion-sized pieces, which I further cut into bite-sized, 1-inch cubes.

I looked at the clock and realized I only had less than an hour to cook dinner. Rice was already steaming in the rice cooker and a sweet, mild scent wafted around. A bowl of salad for our side was already chilling in the fridge.

I remember my mother used to make something similar to this dish and add diced potatoes and mushrooms, which you can certainly do. It was a main dish for special family dinners and she called it “Tenderloin Tips.”

You don’t have to wait for a special occasion to make this main dish. You can make it for tonight and there is hardly any waiting time as the beef steak bites cook quickly.

Why you’ll love this

These Garlic Steak Bites will be on your frequent menu after you try making them. The ingredients are easily available. They may already be in your pantry. Preparing the marinade is simple and uncomplicated and doesn’t take too long. There are probably cuts of beef you can already use in your freezer. That’s how I came up with my version – I found a few pieces of steak. This is absolutely a given – whether you’re just learning to cook or you’re a cooking pro, you’ll find this easy to pull off, and when you cook over moderate, medium heat, you’ll end up with a tender, juicy, flavorful and delicious slab of cubed steak bites. I recommend eating immediately, even straight from the pan if necessary.

Required ingredients

  • Steak cuts – one and a half pounds of beef tenderloin, sirloin, New York strip steak or rib eye as an entree. Cut them into 2.5cm cubes. I often use what I buy on sale.
  • Lea and Perrin’s Worcestershire sauce – always goes well with roast steak. This sauce is one of my staples and I often use it to marinate meat to add flavor.
  • Garlic – at least 6 to 8 cloves; or a whole head, peeled and chopped.
  • Garlic powder – refines the marinade. This is a spice powder made from dehydrated and ground garlic. It has a concentrated and very savory taste.
  • Onions – one medium sized white or yellow onion
  • Frozen green peas – a cupful adds that color to the steak and the mild, sweet flavor enhances the effectiveness of the marinade.
  • Salt and ground black pepper – a pinch each and enough to taste.
  • Extra virgin olive oil – for pan frying.
  • Unsalted butter – about 2 tablespoons added to the EVOO provides a rich, full flavor to the steak bites.

Storage and warming up

Store leftovers in a covered container in the refrigerator for up to a week.

The steak cubes can also be frozen in freezer containers for up to a month.

To reheat leftovers: Remove from refrigerator and microwave, covered, on high for 1 to 2 minutes.

From the freezer: Thaw at room temperature and microwave on high, covering, 1 to 2 minutes. A fresh portion of frozen green peas, about 1/2 cup, is a delicious addition.

  • 1 quite medium white or yellow onion, sliced

  • Wash the beef pieces with water to remove any blood. Pat the steaks dry with paper towels.Cut the meat into 1-inch cubes. In a large mixing bowl, season with the Worcestershire sauce, garlic powder, salt and pepper. Cover and place in the refrigerator and let the meat soak up the marinade for about 15 to 30 minutes.

To prepare the garlic steak bites

  • In a cast iron skillet (or heavy-bottomed skillet), add the extra virgin olive oil over medium heat. When the oil is hot enough, after about 1 to 2 minutes, add the butter. While the butter is melting and sizzling, add the garlic cloves. Sauté the garlic cloves in the pan until browned and fragrant, about 2 to 3 minutes (tip: do not burn the garlic). Remove the fried garlic with a slotted spoon and set aside.Add the onions and cook until soft and translucent, about 2 minutes.
  • Add the pre-marinated beef steak cubes to the pan. Pan-fry the steak cubes until cooked through, turning them over to cook evenly. Here are instructions for the desired doneness. Choose how you want to cook from the following options:Rare to medium-rare steak: Sear over medium heat for 2 to 3 minutes per side.Medium-rare to medium steak: 3 to 4 minutes per side.Medium to well done: 4 to 5 minutes per side.
  • When the beef cubes are cooked, add the green peas and distribute evenly.Allow the peas to soften and pan-fry them for about 2 minutes.Add the fried garlic back to the steak mixture in the pan.Serve immediately warm with a side of rice and salad.

Cook’s comments:

  • My mother cooked something similar to this dish when I was a child. I remember her adding mushrooms and diced potatoes to the steak pieces in the pan. These are optional, but feel free to add these ingredients to make a delicious meal.My mother’s best cooking tip: Keep the heat on medium for a tender, juicy steak. Cooking meat for too long at extremely high heat will result in tough meat.
